The Chef is a supervisory role and an essential part of the Thompson's Resort operations. The Chef is a supervisory role and an essential part of the Thompson's Resort operations. The Chef is responsible for ensuring smooth, successful, and safe kitchen operations for our full-service restaurant. The Chef will lead the culinary team through special events and participate in negotiations, fulfill requests and meet guest requirements. This position is part of the leadership team and will work collaboratively and in consultation with the resort staff and Resort Manager with the goal of exceeding guest expectations.
Areas of responsibility are but not limited to:
- Manage and supervise all food service operations including staff meals, and shore lunches
- Manage and supervise kitchen team
- Hiring and training
- Setting kitchen hours and ensuring staff are scheduled appropriately - Menu engineering
- Inventory control, ordering and pricing
- Source ingredients and develop relationships with local suppliers
- Propose and develop new ideas, initiatives, and special events with a focus on innovation and profitability
- Ensure kitchen health and safety standards are met and maintained
- Budget development and financial management
- Meet forecasted food cost and labor targets
- Develop standard operating procedures and manuals
- Network with local community, participate in cultural events and activities
- Other duties as assigned
